Suz’s GF Applesauce Spice Muffins
Cooler fall weather seems to create cravings for warm spices. This gluten free applesauce spice muffin is the perfect answer. Not only gluten free, but easy to make. You can enjoy these guilt free for a weekend brunch treat or as a weekday mid-morning coffee break. I recommend giving it a try with a piece of old cheddar and a cup of hot coffee or tea. Feel free to add raisins to the batter for variety.
Ingredients
1/2 C almond flour
1/2 C GF flour mix (such as Bob’s Red Mill 1:1 flour mix)
1/3 C sugar
1/2 t salt
1/2 t baking soda
1/2 t baking powder
1/2 T cinnamon
1/2 t allspice
1/2 t ground cloves
1 egg (or egg substitute)
1/2 C applesauce
2 T melted butter, cooked to room temperature
Instructions
Preheat oven to 350F. Prepare muffin tin with 6 parchment papers.
Mix together dry ingredients in mixing bowl.
Combine egg, applesauce and melted butter. Add to dry ingredients and stir well.
Spoon batter into 6 muffin papers. Smooth top with back of spoon. Sprinkle each with a pinch of sugar.
Bake 15-20 minutes. Remove from oven and cool before moving from muffin tin.
