Suz’s Mango Salsa
Cut into small dice, and stir together:
1 ripe mango, peeled and chopped
1/2 green pepper, chopped
1/2 red onion (mild), chopped
1 small tin diced pineapple with juice (5 fl oz or 142 ml)
1/8 cup finely chopped cilantro leaves
1 T lime juice
Dash of salt
(Optional: 1 T southern comfort)
Let stand 1 hour before serving for flavours to blend.
Cover and store refrigerated for 2-3 days.

This sounds excellent. Wouldn’t mind trying that.
Note for different tastes: the cilantro gives this a south-west flavour. For something a little different, try different herbs: parsley, mint or oregano for a more mediterranean flavour or to match different meat or fish menus!
