Whether it’s mexican, greek or indian food, a herbed yogurt condiment is the perfect side dish to offset spicy flavours.  This is a favourite cucumber-tomato-cilantro raita that goes perfectly with a curry.  Makes about 1 cup.

Mix together:

1/4 cup diced cucumber, peeled
1/4 cup diced tomato
2 green onions
1/3 cup yogurt, plain
1/3 cup sour cream
2 T. chopped, fresh cilantro leaves (not dried)
1 t. cumin
fresh ground salt & pepper
1 t. lime juice

Cover & chill. Serve with curry, basmati rice, naan bread and sliced cucumber, green peppers or carrots.
