Suz’s Original Oatmeal Cookies

I was making my granola mix [see Suz’s Great Granola] and thought: this would make a good cookie base…so here you go!  Double the recipe for Suz’s Great Granola and make cookies with half the mixture!

Ingredients

Granola Ingredients:
2 cps large flake rolled oats
1/2 cp slivered almonds
1/2 cp shredded coconut (sweetened or unsweetened as you prefer)
1/8 cp corn syrup
1/8 cp honey
1/8 cp vegetable oil (canola preferred)
1 – 100 ml serving of unsweetened applesauce (individual portion size)
Cookie additions:
1 cup milk (dairy, soy, rice or almond – we use almond milk
1/3 cup margarine or butter
1/3 cup brown sugar
1 egg or 1/4 cup egg whites
1 cup flour
1/2 T. baking soda
1/2 t. allspice
1/4 t. ground cloves

Instructions

Start by mixing together the same ingredients as Suz’s Great Granola:
2 cps large flake rolled oats
1/2 cp slivered almonds
1/2 cp shredded coconut (optional: sweetened or unsweetened as you prefer)
1/8 cp corn syrup
1/8 cp honey
1/8 cp vegetable oil (canola preferred)
1 – 100 ml serving of unsweetened applesauce (individual portion size)

Then add to those same proportions:
1 cup milk (dairy, soy, rice or almond – we use almond milk 🙂
Let sit 1-2 hrs to soften oat mixture.

Cream together:
1/3 cup margarine or butter
1/3 cup brown sugar
1 egg or 1/4 cup egg whites

Mix together and add:
1 cup flour
1/2 T. baking soda
1/2 t. allspice
1/4 t. ground cloves

Combine the softened oat mixture, creamed mixture and flour mixture & stir until well mixed. Chill for 15-20 min.

Preheat oven to 350F. Line large baking sheet with parchment paper.
Roll into balls or drop cookie dough by 1 T. amounts approx. 2 inches apart onto sheet. Flatten slightly.
Bake 12-15 minutes. Remove from oven and let sit for 5 minutes before removing to cooling rack.

This makes approx. 3 dz cookies and the recipe can easily by halved.
These cookies are soft not crispy or chewy.
