Suz’s Prize Pumpernickel Bread
Winning recipe I put together for the Olympic Gold Medal Hockey game – Go Canada! To go with Montreal smoked meat, butter tarts and beer for a truly Canadian menu.
NOTE: 1/8 cup = 2 Tablespoons
Follow breadmaker directions or mix & knead by hand:
Mix dry ingredients:
1 cup rye flour
1 cup whole wheat flour
1 cup white flour
1/4 cup brown sugar (packed)
1/8 cup cocoa powder
1 t. salt
1 pkg dry yeast – rapid rise or breadmaker
[Optional: 1 T. caraway seeds]
Add liquid ingredients:
1 cup warm water
1 T. lemon juice
1/8 cup oil
When dough setting done or after rising once, turn out dough on lightly floured board. Let rest 5 minutes.
Prepare baking sheet or bread pan: use parchment paper (best), lightly grease with butter & sprinkle with corn meal.
Punch down and shape into round loaf, or roll into long loaf or roll for loaf pan.
Cut shallow slits in top of round/long loaf to prevent cracking.
Cover and place in warm place to rise until nearly double (45-60 min).
Bake: 375F for 30 minutes.
Brush with melted butter, margarine or oil after removing from oven for a softer crust.
This makes a great pumpernickel – good texture and wonderful taste!
